This coffee is produced by Nestor Lasso at El Diviso, a family-run farm in the renowned Huila region of Colombia. Nestor, alongside his brother Adrian, is celebrated for crafting competition-winning coffees that push the boundaries of quality and innovation. This unique coffee, a rare Ethiopian Landrace variety locally known as Ombligon, is cultivated on the slopes of El Diviso. Named for its "belly button"-shaped cherries, Ombligon's origin remains mysterious, rumored to have traveled to Colombia from Central America.
Harvesting is done in dry weather to ensure the cherries are sweet and ripe. Only the best cherries are chosen and sorted. Fermentation starts with 30 hours in bags without oxygen, followed by 40 hours in sealed drums. Luwak yeast is added at 32°C and mixed for 36 hours to enhance the flavour. The process is stopped using hot water (65°C), and the coffee is dried in a sealed dehumidifier to preserve quality. Finally, the coffee is rested and slowly dried to reach the perfect moisture level.
