Producer and Region
This coffee comes from the ASCISP Cooperative in Planadas, Tolima, Colombia, where 79 farmers from seven villages grow coffee at elevations of 1,700 to 2,000 meters. The region, often called the cloud factory for its high humidity and volcanic soils, provides ideal conditions for growing coffee. However, the same humid climate makes drying coffee a challenge, which impacts quality and farmer incomes.
The Fabrica Project
To address these challenges, so came Fabrica project. Installing two mechanical dryers—one for each cooperative—that can process up to 4,000 kg of wet parchment at a time. These dryers not only improve the drying process but also help farmers achieve consistent quality and meet stricter moisture content standards.
Cultivation and Processing
Farmers in this cooperative grow coffee alongside staple crops like beans and corn, which supports biodiversity and their local food supply. Cherries are hand-picked every 20 days to ensure only the ripest ones are selected. The coffee is traditionally fermented, washed twice, and then dried in the new mechanical silos, reaching the precise moisture content needed to ensure long-lasting quality.
This is also our first coffee transported via By Sail, an initiative that uses sail-powered vessels to reduce the carbon footprint of coffee shipping. From farm to cup, this coffee represents a step forward in sustainability while supporting the people and traditions behind it.
Flavour
A well-balanced cup with a round body, bright acidity, and a touch of spice, complemented by caramel sweetness, crisp apple notes, and a true-to-Colombia green bell pepper savory note.
