This coffee is produced by Felipe Arcila who is along with his brother Carlos Arcila the 4th generation of coffee growers in the family. Their father, Jairo Arcila told his sons that the coffee industry was not profitable because of the many economic challenges he had faced in the past. Because of this advice, Felipe and Carlos both pushed forward with their careers in civil engineering and traveled to Australia to continue with their master’s degrees.
Felipe was amazed by the coffee culture he saw in Australia and was inspired to be a part of it. When Felipe finished his studies and returned to Colombia, he became more involved in coffee and started to study Specialty Coffee. Felipe and Carlos then bought Jardines del Edén where they focus on growing exotic varieties of coffee.
This coffee was exposed to a dry aerobic fermentation of 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22°C. Then the whole cherries were placed on raised beds until ideal moisture content was achieved.
The Java variety finds its origin in Ethiopia as a natural mutation of Typica, seeds were later taken to Indonesia where it was named Java. With their bronze tipped, wide and long leaves, and the longest cherries ever seen in Colombia, Java trees are very different from other varieties.
This complex, delicate and sweet coffee is unique because of its soft and sweet fruitiness and silky texture. The flavour profile is very different from many others we are used to. In the cup you will find a intense ripe, matured fruitiness, distinct floral notes and a savory layer that makes this coffee super complex.
