La Palma & El Tucán, founded by Felipe Sardi and Elisa María Madriñán, is a pioneering farm in Cundinamarca, Colombia. Situated in the Andes Mountains at 1,600–2,000 meters above sea level, the farm thrives in volcanic soils and a unique microclimate, ideal for cultivating complex, high-quality coffees. Known for their collaboration with local neighbouring farmers to source exceptional cherries while improving livelihoods.
This farm is one of the most sought-after coffee producers globally, with numerous award-winning micro- and nanolots. With a standout achievement by Jooyeon Jeon winning the World Barista Championship using one of their coffees back in 2019.
This Yellow Bourbon, part of their exclusive "Warrior Series," is grown using sustainable, organic practices that prioritize biodiversity, shade-grown coffee, and soil health. The cherries undergo an anaerobic natural process, fermenting in sealed tanks for 60–100 hours to enhance microbial activity and flavour complexity. After fermentation, the cherries are dried on raised beds under shade, preserving their vibrant tropical fruit and floral characteristics.
Expect tropical fruits; think melon, lychee, and papaya, balanced by a citrusy acidity. The anaerobic fermentation adds layers of candy-like sweetness, while a silky mouthfeel and floral blossom undertones round out this exciting clean cup. The flavour will transform from hot to cold, so be patient and let the flavours fully develop.
