Corazón de Jesús Micromill, located in the youngest coffee-producing region of Costa Rica, Brunca, is managed by the Alvarado Fonseca family. Established in 2015, the family's mission has been to craft innovative, high-quality coffees while working in harmony with nature. Situated at 1700 meters in the Chirripó microregion, their farm Los Toños benefits from fertile soils and cool mountain air, providing ideal conditions for the production of this exceptional Java.
Processing
The Alvarado Fonseca family’s pioneering Natural Reposado process begins with hand-picking ripe cherries, which are then fermented for two days in bags at controlled temperatures. After this initial phase, the cherries are sun-dried on African beds for 4 to 7 days, followed by a second fermentation phase inspired by winemaking techniques, lasting 8 to 10 days. Finally, the cherries undergo a slow and precise drying period on patios for another 15 days. This careful process enhances the complexity and structure of the coffee, creating a distinctive flavor profile.

In the cup, this Java presents a captivating interplay of wine-like acidity, tropical fruits, and layered sweetness. Expect notes of cherries and ripe plum, with a rich, smooth finish that reminds of high quality cacao, all reflecting the precision and innovation of the Natural Reposado process.
