This Gesha is lively and smooth, with notes of ripe cantaloupe, sweet mandarin, and soft hints of white flowers. Its creamy texture and sweet citric undertones are complemented by a gentle, lactic acidity, brought to life by the slow natural drying process.
Nestled in Costa Rica’s Brunca region, Don Senel Micromill was founded by Senel Campos Valverde in 2014 out of necessity to combat unstable coffee prices. Positioned between two mountain canyons, the farms Las Huacas and El Cola Roja benefit from fertile soils and a distinctive microclimate. This environment nurtures the production of exceptional microlots, including this Gesha, grown at elevations between 1350 and 1900 masl.
This lot of Gesha underwent a precise and slow natural process, designed to enhance the inherent complexity of the variety. Cherries, hand-picked at peak ripeness, are carefully dried over 30 to 40 days. Initial manual selection on African beds is followed by slow, controlled drying in a shaded greenhouse, with close monitoring of temperature and Brix levels. This extended drying phase elevates the Gesha's clarity and structure, allowing for a nuanced expression of its terroir.
In the cup, this Gesha reveals an intricate balance of fruit and floral characteristics. Expect white flowers and ripe cantaloupe, layered with sweet citric flavours and a yoghurt-like creaminess. The slow drying process brings all elements into perfect harmony.
