Producer and Region
This coffee is produced by Alejo Castro Kahle on Volcan Azul, located in the fertile soils of the Vallée Centrale, Costa Rica, at 1,450 meters. The farm sits on the edge of the Brava Volcano, benefiting from a rich volcanic soil. Alejo continues a family legacy spanning five generations, preserving biodiversity and innovating in coffee processing.
Alejo is a long-time partner with whom we’ve worked for many years. During our visits to Volcan Azul, we were struck by the natural beauty of the region and Alejo’s dedication to sustainable farming practices.
Cultivation and Processing
Alejo produces this Typica coffee with exceptional care, focusing on developing its natural strengths. After selective hand-picking, the cherries undergo anaerobic fermentation in CO₂-filled cans, followed by drying on raised beds. Stirred daily and covered at night, the coffee is dried to precise moisture levels, resulting in a clean and expressive cup.
Flavour
This coffee is sweet and fruity, with a juicy mouthfeel. Its flavour profile highlights ripe cantaloupe, honey, and nectarine, showcasing the lively qualities of Costa Rica’s volcanic terroir.
