Producer and Region
Right in the middle of the breathtaking mountains of the Apaneca Ilamatepec region, you’ll find the large farm San Francisco, nestled on the slopes of the Santa Ana Volcano. The farm is managed by Jose Antonio, Andres, and Jose Salaverria. San Francisco is divided into several smaller farms (“Tablones”) and El Pedregal is one of them. The Salaverrias grow a number of different varieties at their farms. The majority is a mix of the traditional Bourbon Elite, and something they call Hibrido San Fransisco which is a mix of Bourbon Elite and Pacas.
Processing
The most impressive thing about coffees from the Salaverria family is the overall quality of picking: deep blood red and uniform color. For this washed lot they used an eco pulper that removes about 80% of the mucilage. Then the coffee is soaked overnight and dried in 15 days on raised drying beds. These process steps made this coffee elegant, bright and clean.
Flavour
This is a super comfy, delicate and all day coffee. You can expect a classic Salvadoran flavour profile that is soft, balanced and chocolaty, complemented by a bright, apricot like acidity.
