Producer and Region
Yirgacheffe is literally translated as the "Land of Many Springs." It has the ideal topography and elevation, combined with plenty of water sources to produce and process exceptional coffee. Additionally, it is considered to be the birthplace of coffee.
The washing station, owned by the exporter SNAP, is located in Gedeb, a micro-region in Yirgacheffe. SNAP collaborates with local small-scale farmers, who supply their finest cherries. The washing station is situated at an altitude of 2,000 meters. Due to the high altitude, the coffee dries slowly and is less susceptible to insect damage.
The result is a high-quality coffee with a more intense flavor profile. SNAP has delivered complex, finely traced, and organic coffees year after year, so this year we have this lot alongside our beloved washed Chelchele.
Processing
The washed process begins with pulping the cherries and placing them into fermentation tanks where they undergo a 72-hour fermentation in water. After fermentation, the coffee is thoroughly washed and then dried on 200 raised beds at the station for 7–10 days, achieving the perfect humidity level.
Flavour
This coffee is rich with the classic flavors expected from a washed Ethiopian coffee. It has a crisp, clean profile with a layer of milk chocolate-like sweetness, making it ideal for espresso.
