This coffee is offering an incredible profile that brings us back to those Ethiopia natural from several years ago.
Region & Production
The Guji region, known for its quality coffees, boasts a very mountainous terrain with high peaks. The terroir of this region offers the classic Ethiopian profile, characterized by its ripe sweetness and citrus flavours. This coffee, processed by the Okoluu Farmers Group, consists of handpicked cherries from cooperating smallholder farmers.
Processing
The coffee undergoes a dry fermentation process in which the coffee cherry, with all the fruit pulp still attached, is left in the sun to dry. The cherries are regularly moved and covered during the hottest hours of the day to shield them from intense sunlight and again at night to protect against humidity
Flavour
The result is a coffee that is both flavor-dense and sweet, offering an incredible profile that brings us back to those Ethiopia natural from several years ago. It’s wild and funky, yet delicate, floral and super fruit forward.
