This exceptional coffee hails from Coffea Diversa, located in Jutiapa, Guatemala, at high altitudes of 1,500 to 2,000 meters. Managed by José Padilla and Gonzalo Hernandez, Coffea Diversa is home to the largest private collection of botanical coffee varieties in the world, with over 25 unique cultivars. Their commitment to preserving coffee biodiversity positions Coffea Diversa as a pioneer in the coffee industry.
The Abyssinia variety is an Ethiopian natural mutation discovered in southwest Ethiopia by Dutch botanist P.J.S. Cramer in the 1920s, later introduced to Indonesia. Its distinct profile thrives under Coffea Diversa’s careful cultivation.
Cultivation and Processing
The coffee cherries are hand-picked at their peak ripeness and undergo 48 hours of anaerobic fermentation. Following this, the cherries are pulped and dried on raised beds for three weeks, ensuring consistent quality and flavour clarity. The honey anaerobic process, which involves fermenting the cherries in sealed containers to promote unique microbial activity, enhances the coffee’s sweetness.
Flavour
This coffee offers a lively and clean cup, with refreshing orange peel acidity. It’s delicate at every stage, from warm to cold, with a ton of sweetness reminiscent of vanilla and candy cane.
