Producer and Region
This coffee is produced by Eddy Macdonald Lopez on Finca Las Gardenias, located in the high-altitude region of Huehuetenango, Guatemala. The farm, nestled in Malacatancito at 1,900 meters, thrives in pristine natural surroundings. Eddy is deeply committed to environmental conservation, preserving the farm’s native trees, protecting spring water sources, and maintaining the habitats of diverse animal species, including the Quetzal, Guatemala’s national bird. Finca Las Gardenias holds environmental certifications such as Rainforest Alliance to affirm its dedication to sustainable practices.
Cultivation and Processing
This Pacamara coffee is harvested at peak ripeness and undergoes a natural processing. Cherries are sun-dried on patios for the first five days, with regular turning to ensure even drying. They are then moved to African-style raised beds for 17 additional days, completing a 22-day drying process. By carefully monitoring each step, Eddy and his family produce coffee that captures the unique terroir of Huehuetenango.
Flavour
This coffee offers a comforting cup with rich hazelnut notes, complemented by sweet strawberry and dried orange. Subtle undertones of cacao and sugary sweetness enhance the experience, while hints of red fruit add a bright touch to the overall profile.
