Hoysala, a fourth-generation family-owned farm established in 1889, is located in the Baba Budan Hills of Karnataka, India. The region of Western Ghats is renowned for its fertile soil, rich biodiversity, and traditional coffee-growing heritage. Hoysala is dedicated to chemical-free farming, cultivating Arabica coffee under the shade of natural forests alongside spices and fruits. Their commitment to sustainability, community, and quality has made them a standout producer in India’s specialty coffee scene.
This coffee is made from old and new Sarchimor varieties, grown at 930 meters above sea level. The cherries are handpicked and processed using a natural method. After harvesting, the cherries are washed, sorted, and air-dried on special trays to remove surface moisture. They are then spread on multi-level iron mesh to caramelize the sugars before being dried on raised beds for even drying. The coffees are stored in their cherry casing to stabilize moisture before being dry-milled, sorted by hand, and packed in bags.
Expect a rich and earthy cup with notes of dark chocolate, dried figs, and a subtle hint of spice. The natural process enhances the coffee’s sweetness, while a smooth, velvety body and balanced acidity create a harmonious and satisfying finish.
