Pedro Rodriguez Escribano cultivates this coffee on the Baru Black Mountain farm in Chiriqui, Panama. Located at 1,350–1,500 meters, the farm sits on the mineral-rich volcanic soil of Volcan Baru. This region benefits from natural shade provided by century-old trees and streams that create an ideal microclimate for coffee production. The farm's proximity to La Amistad International Park, a UNESCO World Heritage Site, highlights its biodiverse surroundings. Pedro’s commitment to sustainability includes supporting workers' families with medical and educational resources and adopting innovative processing methods.
Processing and variety
This Yellow Catuai coffee undergoes a precise natural process. After selective hand-picking, cherries are carefully dried on raised beds, a technique that preserves and enhances their natural fruity complexity. The controlled dehydration in oven-equipped African beds contributes to its balance and aromatic intensity.
