This Yellow Catuai undergoes a precise washing process, utilizing fresh stream water to wash the cherries. Drying takes place on raised African beds inside an oven, a controlled system that enhances the coffee’s cleanliness and aromatic complexity.
The washed process gives this Yellow Catuai a clean character, with soft acidity and a velvety, round texture that brings perfect balance. Its profile unfolds with milk chocolate, lightly roasted pecan, and delicate yellow stone fruits like nectarine.
